Ferments – and a recipe!

You may have heard me talk about ferments in this column. For those of you who don't know what ferments are and why you should care, here's a short article and a recipe for you to try.

So what is food fermentation? Fermentation is a natural process through which microorganisms like yeast and bacteria convert carbs - such as starch and sugar - into alcohol or acids. The alcohol or acids act as a natural preservative and give fermented foods a distinct zest and tartness. For example, yeast performs fermentation to obtain energy by converting sugar into alcohol.
